Day 10 £20 Challenge

£20 challenge between now and Sunday night xx vegan eating on a budget, breakfast, lunch and dinner xxxx (Link to part 2 in the comment section below)

HELLLOOOOOO and welcome to the next four days of budget recipes and tips on staying vegan on a low incomexx
one of the biggest questions i alwsy get asked when imdoing activism, is wehat do you eat?? and especially, what do you eat on a budget…so, im showing you BREAKFAST LUNCH AND DINNER FOR A SINGLE PERSON for 4 full days, for only £20, thats only £5 per day xx
now, for the disclaimer bit, lol, this is what I honestly will eat, and do eat regularly, but it DOES NOT include, other general shopping such as washing up liquid, for example, and it is also assuming you have at least SOME seasonings in your cupboard…for this challenge, Im only using salt and pepper, turmeric cumin, garlic and smoked paprika.curry powder and cinnamon I dont use margerine on my food, so it is not included, but I am assuimng that you have olive oil in your cupboard, if not, you dont have to use it , but iwill be using a little, and it is not in the £20 budget…however EVERYTHING else is….
my partner Sean Allen, will probably be eating with me at some stage over the weekend and i will include him in the budget too, so you know you can have apal or two round and you wont be eating alone on this budget xxx

so here is myshopping list

i also have at home already
1 bag of wholegrain rice £1.50

1 wholemeal loaf 45p
1 bag of budget oats 79p
1 packet of frozen blueberries £2
1can of tomatoes 45p
1 can of coconut creme 50p
1 lettuce 50p
1 litre of soya milk £1
1 lemon 35 p

total £19.27, which means ive got 37 p left xxx

LETS DO THIS !!!!

THURSDAY

over night oats with blueberries and 1/2 banana, and cinnamon , with soya milk

snack: spinach and banana smoothie, blend with water in the nutribullet, it will surprise you, its yummy xx

lunch ; black beans (use half the can ) with tomato, red pepper strips, spring onion, letuce, and some cooked pasta. add one tablesppon of olive oil and lemon dressing xx season with salt and pepper

dinner scramlbed tofu (use 1/3 of the block) peppers, mushrooms, some of the onion, garlic, turmeric, and serve with a wrap, some cooked brown rice and some steamed broccoli

snack toast and hummous (make this with 1.2 can of chickpeas)
