Day 13


Breakfast ..over night oats with frozen blueberries, banana soya milk and cinnamon

Lunch ….heat up the remaining roasted vegetable sauce from yesterday and serve either with pasta, or with a wrap xxx

Dinner …tofu skewers with spicy rice

Marinade the remaining 1/3 of tofu block (large cubes) in a mix of olive oil , smoky paprika, cumin, garlic and chilli , turning a few times

Cook some wholegrain rice

In a fry pan saute the last of your onion, mushrooms and peppers, and grated carrot until soft, add cumin and smoked paprika , and add the rice and stir well

Place the tofu onto a skewer and if you have a grill plate , cook it on that, if not ,bake in the oven (soak the wooden .bamboo skewer in water first so it doesn’t burn) …keep turning the skewer so it gets cooked evenly on all sides…serve on top of the rice and top with sliced spring onion .
