here is your Saturday  meal plans xx how are you getting on? ps, in the Friday night chickpea curry recipe i forgot to mention that you put in the half a can of chickpeas left over from making your hummus.


breakfast ….. scrambled tofu with mushrooms and spinach, served with toast x
scramble all the ingredients with a little olive oil , in a fry pan. (cut up the tofu with the back of a fork to get the ‘egg’ type texture. add 1 tsp turmeric and season with salt and pepper and serve with toast

lunch ..roasted vegetable soup with garlic croutons and coconut creme.
in a baking dish place sliced red peppers, onions, and mushrooms with olive oil and several cloves of garlic and roast slowly for 35 minutes, stirring ad mixing regularly. ina saucepan place 1 tin of chopped tomatoes and 2 chopped fresh tomatoes ,1 tblsp sugar and salt and pepper . simmer down for 20 mins until thicker and unctious then add the roasted vegetables (remove the garlic from their skins and place back into the pan)..(.remove half in a bowl for lunch tomorrow to serve with pasta) and then add 1 cup of water or good vegetable stock to make a soup xxx place 1/2 of this into a blender to make creamy and smooth and add back to the soup so you have a contrast of creamy with chunks of roasted veg , heat through and serve with a swirl of coconut creme, (you will have some left from last nights curry) and garlic croutons

take 2 slices of bread and rip into basic cube and random shapes ..drizzle generously with olive oil, salt and pepper and garlic, that have been all mixed together xx place in the oven at 200/gas 6/400 for 10 or so minutes until the bread if well toasted xx serve a handful on top of your soup and use any left overs to dip into your homemade hummus

now i was very lucky to find a bag of coriander for 7p tonight, so i would also put this into this soup , but its not essential xxx

dinner ….pasta with a creamy avocado and spinach pesto …..
saute some onion and garlic with a little olive oil in a fry pan …once soft add 2 big handfuls of spinach and simmer with1 tblsp of water until the spinach has wilted..season well and leave to cool . in your nutri bullet place the remainder of your avocado, the spinach and onion mix, and a large glug of olive oil and the juice of half the lemon. pour over a large bowl of your streaming hot pasta.

(if you have dried herbs like basil or thyme, then add them , I used the corander that i got for 7p, but i know this would be out of budget if it was not reduced, if I had found parsley or basil , that would work really well also )
