Day 14

Was craving a warm bowl of veggie goodness today… Something old school, nourishing and tasty… Something rammed with veggies and flavour and here it is.. A lentil and butternut squash dhal with wholegrain rice

This could not be simpler

Place your wholegrain rice on to cook
In a separate pot Place 1 cup red lentils, 1 chopped carrot and 1 chopped parsnip and 1 clove minced garlic and 3 cups water
Bring to boil and simmer for ten minutes
Add 1 cup diced butternut squash and 1/2 head of broccoli. Season with salt and pepper, 1tsp cumin and pinch of chilli
Simmer on low for 15/20 mins adding a little water if it starts to stick, stirring occassionally
At the end add 1/4 can coconut cream and 1 large handful of fresh coriander
Cover and let rest in pot with heat off for 5 minutes x
Toast some cashew nuts in a dry non stick pan until they are golden
Serve a bowl of rice with dhal on top and top with cashews xx
