Day 4

so, ive taken some of those delicious high protein ingredients and made a power packed high protein salad for lunch today

edamame and brown rice with coriander and lime tofu mayo

1 cup of cooked wholegrain rice
handful of halved cherry tomatoes
some sliced green onion (scallions)
1/2 sliced red or yellow pepper
1/4 inch diced cucumber
1cup of edamame beans

place all in a bowl and stir, and season with salt and pepper

coriander and lime tofu mayo

1 carton of silken tofu
handful of coriander
juice of 1 lime
salt and pepper
1tblsp olive oil

blend all in the nutri bullet
this will make a lot of dressing so store it in a lidded jar and use on top of baked potatoes, as a coleslaw dressing, to dip crudite into, as a dressing for salad in wraps, or as a side to serve with chilli or curry xx you can change the herbs and citrus..ie lemon an parsley, or mint and garlic, with lemon xxx
